Let them Eat Cake



Another token of affection you might wish to bestow on your loved one is a batch of home made Valentine cupcakes/muffins. Present them in a pretty box tied with a fancy ribbon. This might also be a good idea for the children because if your kids are like mine when they were younger, they had to be involved in everything and Valentines Day is no exception. 




 
  
Valentine Cakes

Ingredients

Cake

175g/ 6oz S R Flour
110g/4oz Butter (unsalted)
110g/4oz Caster Sugar
2 large Eggs
1dsp lemon juice
Grated rind 1 lemon.

Butter Cream

75g/3oz Unsalted Butter
225g/8oz Icing Sugar
1 tsp Lemon juice
1 tsp milk if needed

Decorations
Any sweets, flowers or fresh fruits the choice is yours but you could try any of the following:
  • Jelly or chocolate hearts
  • Love Hearts
  • Jelly sweets
  • Mini marshmallows


Method

Pre heat oven to 190 (Gas mark 5, 375o F

Beat butter until soft and then add the caster sugar and cream well. I have always found a good tip is to cream until the mixture appears paler in colour than it did originally.

Mix in lemon juice and lemon rind

Then begin adding eggs and flour. I find it you add these ingredients alternately the mixture is less likely to curdle.

Divide mixture between the paper bun cases. Should make 12

Place in th4 centre, of the oven cook for 15 to 20 minutes until risen and light golden in colour.

Leave to cool on a baking tray

Whilst they are cooling mix up the butter cream and then pipe or spread butter cream over the top of the cakes.

Then decorate with whatever decorations you have chosen.
